Estate Olio Di Oliva
This is an estate-grown Olio Nuovo. In traditional Olio Nuovo, the olives are picked, milled, and bottled immediately —whereas regular olive oil is bottled 2 months later. Olio Nuovo is the first indication of the crop. Ours is fresh, fruity, and bright green. It has a little bite, as do all good olive oils. In Italy, olive oil is judged by the "cough test"... 3 is the very best. Ours gets at least a 2. Only 10 cases produced.
